ALTERNATIVE OATMEAL






















This recipe is all about the texture of the oats, not the flavour, hence the flavourings being optional.  It results in an impossibly difficult to describe oat mixture.  Kinda flapjacky, kinda stodgy (which i love but stop reading if you don't), a little crispy, a little different.  It's also SUPER HEALTHY, so win win.

Oats
Sultanas (optional)
Mixed spice (optional)
Golden syrup (optional)

The night before
1. Soak oats and sultanas in water in the fridge overnight so that they are fully submerged with about an extra 1mm above them.  

Morning
1. Pop mixture in the microwave for about 2 minutes or until it resembles porridge that's ready to be eaten.
2. Ideally leave the mixture on the side for about an hour.
3. Preheat oven to 180 degrees.
4. Sprinkle with mixed spice and golden syrup and then using a fork break up the mixture which will be stuck together at this stage.
5. Line a baking tray with foil and spray will oil.
6. Transfer mixture to baking tray and spread out as much as possible, see photo below.
7. Pop in the oven for 15 mins before removing and turning mixture with a fork.
8. Return to the oven for a further 10 minutes to finish cooking.

Tips
- Whilst I used value oats, any can be used and if you've pennies to spare, the results will be even better with the expensive kinds since they already have an amazing texture.
- Sultanas could be substituted with almost any dried fruit.  Raisins, apricots, dates or even go fresh and chop up banana (just remember if it's fresh it doesn't need soaking overnight).
- No golden syrup? Honey or sugar will do.
