OH SO SIMPLE AVOCADO PASTA




















Comforting, creamy pasta without the heart attack.  Really easy, really simple and pretty damn cheap.

1/2 ripe avocado
garlic clove
tsp oil
lemon juice
salt
pepper

1. Blitz the avocado, oil and garlic (chop first) in a food processor.
2. Add lemon, salt and pepper to taste.
3. Stir through freshly cooked pasta and you're good to go.

Tips
- Whilst it is possible to pull it off with an unripe avocado you'll be saving yourself a lotta hassle (peeling and blending) if it's ripe.
- From experience using an unripe one, it doesn't actually matter that you can't achieve a perfectly smooth blend as it doesn't taste lumpy with the pasta so don't panic when you have to give up on your blending.

Pennies to spare
Really crispy beyond belief smoked bacon crumbled on top with grated parmesan is the perfect accompaniment to this dish.  As you can see from the photo there are alternatives if you don't have bacon in the fridge, ham and a side salad will do nicely.  Thankyou mumma for providing the ingredients for this recipe.
